Grown at 1,600 meters by Mario Fernando Gomez, this washed-processed bourbon mutation is bursting with candy-like sweetness and electric fruit character that reads more like a childhood summer than your typical coffee tasting wheel.

The Watermelon Bourbon is a rare varietal mutation known for its vibrant pinkish hue during ripening and a cup profile that leans bright, juicy, and wildly expressive. Through natural processing and careful drying, Mario brings out all of the variety’s playful intensity while keeping the structure clean and balanced.

In the cup, expect a rush of blue slushie and watermelon candy up front, followed by a sweet bubblegum finish that lingers long and soft. The body is silky and syrupy, while the acidity has a mouthwatering, soda-like snap that makes this one of the most fun coffees we’ve ever offered.
