After being carefully harvested at the optimal ripeness, the cherries undergo an anaerobic fermentation for 72 hours submerged in water, followed by the addition of yeast paraiso yellow fruit microorganisms to the fermentation tanks. This results in a cup that bursts with flavors of apple, peach, and other bright fruit notes, enhanced by the development of complex aromatic precursors during fermentation.

Once fermentation is complete, the coffee undergoes a thermal shock process, a technique that seals in the flavors, ensuring that the coffee retains its dynamic fruitiness and complexity. Afterward, the coffee is dried carefully in a dehumidifier, preserving its delicate notes while avoiding over-fermentation or oxidation.
