This wild and indulgent Caturra from Finca Milán, grown by Julio Madrid in Colombia’s Quindío region, is an experimental showcase of flavor-forward fermentation done right. Using a nitro-infused fermentation, this coffee transforms ripe cherries into a syrupy, candy-like cup.
At 1,500 meters above sea level, perfectly ripe Caturra cherries are fermented in sealed, oxygen-free tanks infused with nitrogen and carefully selected microbial cultures designed to develop rich, caramelized flavor compounds. The result is a bold, layered cup full of character and sweetness.
In the cup, expect tropical fruits upfront such as banana, with a clean and apparent strawberry and hibiscus note. The texture is creamy and decadent, with a mellow acidity that lets the fermentation shine without overwhelming the structure.
